Doctor Who could account for half my favourites, but I'll content myself with mentioning just my two particular favourites:
The whole series run of Blackadder has multiple great varitations on the opening, but my favourite is the OG for the grandeur of it all: EastEnders varies pretty wildly in quality over the years (as does Doctor Who, naturally), but the intro remains kind of magical. It's probably not my favourite soap, but I think it unquestionably has the best intro:
